{"id":4664,"date":"2015-09-09T10:43:23","date_gmt":"2015-09-09T14:43:23","guid":{"rendered":"http:\/\/blogs.butler.edu\/healthyhorizons\/?p=4664"},"modified":"2015-08-28T10:44:38","modified_gmt":"2015-08-28T14:44:38","slug":"garden-fresh-ingredients-vegetarian-stuffed-zucchini","status":"publish","type":"post","link":"http:\/\/blogs.butler.edu\/healthyhorizons\/meatless-monday\/garden-fresh-ingredients-vegetarian-stuffed-zucchini\/","title":{"rendered":"Garden Fresh Ingredients &#8211; Vegetarian Stuffed Zucchini"},"content":{"rendered":"<p><a href=\"http:\/\/blogs.butler.edu\/healthyhorizons\/files\/2015\/08\/stuffed_zucchini2.jpg\" class=\"broken_link\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft  wp-image-4665\" src=\"http:\/\/blogs.butler.edu\/healthyhorizons\/files\/2015\/08\/stuffed_zucchini2.jpg\" alt=\"stuffed_zucchini2\" width=\"227\" height=\"318\" \/><\/a> These vegetarian stuffed zucchini are a delicious and hearty meatless Monday meal option, or the perfect side dish to just about any kind of grilled or roasted meat.\u00a0\u00a0 It\u2019s a delicious way to get even the pickiest eater to eat their vegetables and this is definitely a recipe you\u2019ll want to make again and again!\u00a0 Enjoy!<\/p>\n<div class=\"ERSIngredientsHeader ERSHeading\"><\/div>\n<div class=\"ERSIngredientsHeader ERSHeading\"><strong>Ingredients<\/strong><\/div>\n<ul>\n<li class=\"ingredient\">2 small to medium zucchini squash<\/li>\n<li class=\"ingredient\">2 tablespoons extra virgin olive oil<\/li>\n<li class=\"ingredient\">\u00bd cup diced Vidalia or other sweet onion<\/li>\n<li class=\"ingredient\">2 medium garlic cloves minced<\/li>\n<li class=\"ingredient\">1 cup sweet red pepper \u00bd inch diced<\/li>\n<li class=\"ingredient\">1 cup diced Crimini mushrooms \u00bd inch diced<\/li>\n<li class=\"ingredient\">1 teaspoon dried oregano<\/li>\n<li class=\"ingredient\">1 teaspoon dried basil<\/li>\n<li class=\"ingredient\">2 tablespoons fresh chopped parsley<\/li>\n<li class=\"ingredient\">\u00bd teaspoon salt<\/li>\n<li class=\"ingredient\">\u00bc teaspoon freshly ground black pepper<\/li>\n<li class=\"ingredient\">1 cup panko bread crumbs<\/li>\n<li class=\"ingredient\">\u00bc cup grated Parmesan cheese<\/li>\n<li class=\"ingredient\">\u215b cup grated Romano cheese<\/li>\n<li class=\"ingredient\">Additional grated parmesan to sprinkle over cooked squash\n<div class=\"ERSInstructionsHeader ERSHeading\"><\/div>\n<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<ol>\n<li class=\"instruction\">Preheat oven to 375 degrees<\/li>\n<li class=\"instruction\">Trim stem end from squash. Cut about \u2153 off the top of each squash horizontally. Then cut a small horizontal sliver from the bottom so that the squash will sit flat and not roll. Dice the tops to \u00bd inch dice and set aside.<\/li>\n<li class=\"instruction\">Using a small paring knife, cut around inside of squash then using a melon-baller, scoop out inside until the squash resembles a canoe. Try not to cut through to the bottom.<\/li>\n<li class=\"instruction\">In a large skillet or frying pan heat the oil over medium heat. Add onion and cook two minutes. Add garlic, red pepper, mushrooms and cut up zucchini tops. Mix to combine and saut\u00e9 one minute.<\/li>\n<li class=\"instruction\">Remove from heat and mix in oregano, basil, parsley, salt, pepper, crumbs and both cheeses. Mix to combine.<\/li>\n<li class=\"instruction\">Divide the filling between each zucchini boat and press into squash filling and pressing as you fill to hold shape.<\/li>\n<li class=\"instruction\">Bake for 35 &#8211; 40 minutes uncovered.
