The easy-to-make gem gets better as it marinates in its sweet-&#8216;n&#8217;-spicy dressing.<\/div>\n<div class=\"ingredient-div\">\n<ul>\n<li>\u00bc cup rice vinegar<\/li>\n<li>\u00bc cup vegetable oil<\/li>\n<li>1 Tbs. sugar<\/li>\n<li>2 cloves garlic, minced (2 tsp.)<\/li>\n<li>\u00bd tsp. dried oregano<\/li>\n<li>\u00bd tsp. dried basil<\/li>\n<li>1 15-oz. can black beans, rinsed and drained<\/li>\n<li>1 15-oz. can pinto beans or black-eyed peas, rinsed and drained<\/li>\n<li>1 \u00bd cups fresh corn kernels<\/li>\n<li>1 red, yellow, or orange bell pepper, finely chopped (1 cup)<\/li>\n<li>\u00bd small red onion, finely chopped (\u00bd cup)<\/li>\n<li>1 2-oz. can diced green chiles with liquid<\/li>\n<li>\u00bc cup chopped cilantro<\/li>\n<\/ul>\n<\/div>\n<div id=\"post_content\">\n<p>1. Whisk together vinegar, oil, sugar, garlic, oregano, and basil in large bowl.<\/p>\n<p>2. Stir in black and pinto beans, corn, bell pepper, onion, chiles, and cilantro. Season with salt and pepper.
