{"id":6004,"date":"2016-11-11T08:00:35","date_gmt":"2016-11-11T13:00:35","guid":{"rendered":"http:\/\/blogs.butler.edu\/healthyhorizons\/?p=6004"},"modified":"2016-11-03T09:34:37","modified_gmt":"2016-11-03T13:34:37","slug":"low-fat-gluten-free-turkey-stuffing-alternative","status":"publish","type":"post","link":"http:\/\/blogs.butler.edu\/healthyhorizons\/lighten-up-your-recipe\/low-fat-gluten-free-turkey-stuffing-alternative\/","title":{"rendered":"Low Fat Gluten Free Turkey Stuffing Alternative"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-6005 aligncenter\" src=\"http:\/\/blogs.butler.edu\/healthyhorizons\/files\/2016\/11\/root-vegetables.png\" alt=\"root vegetables\" width=\"326\" height=\"211\" \/><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 cups parsnip, chopped<\/li>\n<li>1 cup carrots, chopped<\/li>\n<li>1 cup yellow onion, chopped<\/li>\n<li>10 oz. mushrooms, chopped<\/li>\n<li>1 cup zucchini chopped<\/li>\n<li>4 garlic cloves, minced<\/li>\n<li>1 pat butter, or coconut oil<\/li>\n<li>1 teaspoon fresh thyme leaves (from 4-6 sprigs)<\/li>\n<li>2 sprigs fresh sage (10-12 leaves), chopped<\/li>\n<li>salt and pepper, to taste<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat your oven to 400F and line two baking sheets with parchment paper or a <a href=\"http:\/\/www.amazon.com\/gp\/product\/B00008T960?ie=UTF8&amp;camp=1789&amp;creativeASIN=B00008T960&amp;linkCode=xm2&amp;tag=detoxinista-20\">Silpat<\/a>.<\/li>\n<li>Arrange the 4 cups of chopped parsnips into a single layer on one of the lined baking sheets, and arrange the chopped carrots, onion, and zucchini into a single layer on the other lined baking sheet.<\/li>\n<li>Roast both pans of vegetables at 400 degrees for about 20-30 minutes, or until tender. Using a spatula, stir the vegetables half-way through cooking so they do not burn.<\/li>\n<li>While the vegetables roast, melt butter or coconut oil in a skillet over medium heat. Saut\u00e9 the garlic for about 5 minutes then add chopped mushrooms and cook for 8-10 minutes, until tender.<\/li>\n<li>Once roasted, transfer the parsnips, carrots, onions, zucchini and saut\u00e9d mushrooms to a food processor.<\/li>\n<li>Add fresh thyme, sage, salt and pepper to taste. Chop or \u2018pulse\u2019 mixture to combine ingredients, but be careful not to puree.
