Rich and creamy without any added fats, cheeses, or dairy products, it\u2019s simple to prepare, and it\u2019s become my go-to risotto, all wrapped up with a time saving bow.<\/div>\n<\/form>\n<\/div>\n<\/div>\n<\/div>\n<article class=\"hentry h-recipe post-13193 cns_recipe type-cns_recipe status-publish has-post-thumbnail recipe_type-meal\">\n<div class=\"recipe entry-content\">\n<div class=\"row\">\n<div class=\"recipe__ingredients col-sm-4\">\n<h3>INGREDIENTS<\/h3>\n<ul class=\"ingredients\">\n<li class=\"p-ingredient\"><label for=\"1\"><strong>\u00bd<\/strong> sweet onion, diced<\/label><\/li>\n<li class=\"p-ingredient\"><label for=\"2\"><strong>\u00bd tsp<\/strong> fresh garlic, minced<\/label><\/li>\n<li class=\"p-ingredient\"><label for=\"3\"><strong>2 \u00bd cups<\/strong> butternut squash, cubed<\/label><\/li>\n<li class=\"p-ingredient\"><label for=\"4\"><strong>1<\/strong> head broccoli, cut into florets<\/label><\/li>\n<li class=\"p-ingredient\"><label for=\"5\"><strong>2 cups<\/strong> water<\/label><\/li>\n<li class=\"p-ingredient\"><label for=\"6\"><strong>4 cups<\/strong> cooked brown rice (leftover cold rice works best)<\/label><\/li>\n<li class=\"p-ingredient\"><label for=\"7\"><strong>1 cup<\/strong> vegetable broth<\/label><\/li>\n<li class=\"p-ingredient\"><label for=\"8\"><strong>\u00bc cup<\/strong> dry white wine<\/label><\/li>\n<li class=\"p-ingredient\"><label for=\"9\"><strong>\u00bc cup<\/strong> soy milk, plain, unsweetened<\/label><\/li>\n<li class=\"p-ingredient\"><label for=\"10\"><strong>1 tsp<\/strong> kosher salt (optional, to taste)<\/label><\/li>\n<li class=\"p-ingredient\"><label for=\"11\"><strong>\u00bd tsp<\/strong> black pepper (or to taste)<\/label><\/li>\n<\/ul>\n<\/div>\n<div class=\"recipe__directions col-sm-8 e-instructions\">\n<h3>PREPARATION<\/h3>\n<ol>\n<li>In a large saucepan or electric skillet, saut\u00e9 diced onion in a few splashes of the measured water (to prevent sticking) for 3 to 5 minutes, or until softened. Add garlic and saut\u00e9 for 1 minute more. Add the butternut squash and the remainder of the water, and cook for several minutes on a fairly high flame until the vegetables are tender. Then add the broccoli florets, and continue to cook just until the florets turn bright green.<\/li>\n<li>Into the pan of vegetables, add the cooked brown rice, along with the broth and the white wine. Lower the heat if needed to allow the liquids to simmer slowly with the rice and the vegetables for just a few minutes, until mostly, but not entirely absorbed. Stir frequently to keep from sticking to the pan.<\/li>\n<li>Once the broth and the wine are almost completely absorbed, add soy milk for a little creamy finish. Combine briefly (but thoroughly) until the rice mixture is creamy. Remove from heat.<\/li>\n<li>Season to taste, and garnish with toasted breadcrumbs or roasted pecans, if desired.
