It makes a wonderful, protein-rich highlight of any meal. Because\u00a0the flavors continue to meld, it\u2019s also great the next day. This recipe comes to us from\u00a0<a href=\"http:\/\/sharonpalmer.com\/\" target=\"_blank\" rel=\"noopener\" class=\"broken_link\">Sharon Palmer, RDN<\/a>.<\/p>\n<p>Serves 6<\/p>\n<ul>\n<li>1 pound (454 g) dried lentils (or 3 cups cooked; see Note)<\/li>\n<li>4 cups (948 ml) water<\/li>\n<li>2 teaspoons reduced sodium vegetable broth base<\/li>\n<li>4 celery stalks, diced (160 g or about 11\u20442 cups)<\/li>\n<li>11\u20442 cups (224 g) cherry tomatoes, halved<\/li>\n<li>2 medium shallots, finely diced<\/li>\n<li>1\u20444 cup (15 g) packed chopped fresh parsley<\/li>\n<li>11\u20442 tablespoons extra virgin olive oil<\/li>\n<li>2 teaspoons Dijon mustard<\/li>\n<li>2 tablespoons red wine vinegar<\/li>\n<li>1 teaspoon herbes de Provence<\/li>\n<li>Freshly ground black pepper, to taste<\/li>\n<li>1 medium garlic clove, minced<\/li>\n<li>Pinch of sea salt, optional<\/li>\n<\/ul>\n<p>Place the lentils, water, and broth base in a pot. Cover and bring to a\u00a0boil over medium-high heat. Reduce the heat to medium and cook for 15 to\u00a020 minutes, until the lentils are tender but firm.<\/p>\n<p>Remove from the heat, drain any remaining liquid, and transfer the\u00a0lentils to a large bowl. Chill for at least 30 minutes.<\/p>\n<p>Stir in the celery, tomatoes, shallots, and parsley.<\/p>\n<p>In a small dish, make the dressing by whisking together the olive oil,\u00a0mustard, vinegar, herbes de Provence, black pepper, and garlic.<\/p>\n<p>Add the dressing to the lentil mixture and toss. Taste and season with\u00a0sea salt, if desired. Chill until serving time.<\/p>\n<p>Note: If you\u2019re in a rush, use precooked, refrigerated lentils, available at\u00a0many stores.
