{"id":6635,"date":"2017-08-07T08:30:05","date_gmt":"2017-08-07T12:30:05","guid":{"rendered":"http:\/\/blogs.butler.edu\/healthyhorizons\/?p=6635"},"modified":"2017-08-02T13:27:33","modified_gmt":"2017-08-02T17:27:33","slug":"summer-succotash","status":"publish","type":"post","link":"http:\/\/blogs.butler.edu\/healthyhorizons\/meatless-monday\/summer-succotash\/","title":{"rendered":"Summer Succotash"},"content":{"rendered":"<div><em>Serves 6<\/em><\/div>\n<p>2 tablespoons unsalted butter<br \/>\n1 large sweet onion, chopped (about 1 cup)<br \/>\n1 1\/2 cups fresh or frozen beans (lima, edamame, fava, etc), cooked al dente<br \/>\nKernels from 6 ears of corn (about 5 cups)<br \/>\n1 pint cherry or grape tomatoes, halved<br \/>\n1 tablespoon freshly squeezed lemon juice<br \/>\n1\/4 cup feta cheese, crumbled<br \/>\n1\/4 cup basil, sliced in\u00a0<a href=\"http:\/\/www.thekitchn.com\/how-to-chiffonade-fresh-basil-leaves-cooking-lessons-from-the-kitchn-188971\" class=\"broken_link\">chiffonade<\/a><br \/>\nFlaky sea salt and freshly ground black pepper, to taste<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-6636 alignright\" src=\"http:\/\/blogs.butler.edu\/healthyhorizons\/files\/2017\/08\/succotash-salad.png\" alt=\"\" width=\"276\" height=\"353\" \/><\/p>\n<p>In a medium saucepan, melt the butter. Add the chopped onion and a small pinch of salt and cook, stirring, over medium heat until translucent and tender, about 5 minutes. Lower the heat, add the beans and corn and stir over medium-low heat for about 1 minute, until tender but still crisp.<\/p>\n<p>Transfer cooked ingredients to a large bowl and toss with the tomatoes and lemon juice.
