{"id":7796,"date":"2018-09-12T08:30:18","date_gmt":"2018-09-12T12:30:18","guid":{"rendered":"http:\/\/blogs.butler.edu\/healthyhorizons\/?p=7796"},"modified":"2018-09-05T23:23:48","modified_gmt":"2018-09-06T03:23:48","slug":"egg-and-dairy-replacers","status":"publish","type":"post","link":"http:\/\/blogs.butler.edu\/healthyhorizons\/meatless-monday\/egg-and-dairy-replacers\/","title":{"rendered":"Egg and Dairy Replacers"},"content":{"rendered":"<h2 id=\"egg\"><\/h2>\n<p>Some of you may have food allergies while others would simply like to try a vegan diet.\u00a0 In either case, the following substitutions may prove helpful to know.<\/p>\n<p>As a binder, substitute for each egg:<\/p>\n<ul>\n<li>1\/4 cup (2 ounces) soft tofu blended with the liquid ingredients of the recipe, or<\/li>\n<li>1 small banana, mashed, or<\/li>\n<li>1\/4 cup applesauce, or<\/li>\n<li>2 tablespoons cornstarch or arrowroot starch, or Ener-G Egg Replacer or another commercial mix found in health food stores.<\/li>\n<\/ul>\n<p>The following substitutions can be made for dairy products:<\/p>\n<ul>\n<li>Soy milk, rice milk, potato milk, nut milk, or water (in some recipes) may be used.<\/li>\n<li>Buttermilk can be replaced with soured soy or rice milk. For each Cup of buttermilk, use 1 cup soymilk plus 1 tablespoon of vinegar.<\/li>\n<li>Soy cheese available in health food stores.
