{"id":829,"date":"2012-12-10T08:00:21","date_gmt":"2012-12-10T13:00:21","guid":{"rendered":"http:\/\/blogs.butler.edu\/healthyhorizons\/?p=829"},"modified":"2012-12-06T09:14:27","modified_gmt":"2012-12-06T14:14:27","slug":"meatless-monday-detox-salad","status":"publish","type":"post","link":"http:\/\/blogs.butler.edu\/healthyhorizons\/meatless-monday\/meatless-monday-detox-salad\/","title":{"rendered":"Meatless Monday:  Detox Salad"},"content":{"rendered":"<p>Inspired by a popular favorite from the <a title=\"Whole Foods\" href=\"http:\/\/www.wholefoodsmarket.com\/whole-foods-market\" target=\"_blank\" class=\"broken_link\">Whole Foods<\/a> prepared salad bar, this detox salad is packed with nutrients!<\/p>\n<p><a title=\"Detox Salad by Angela Liddon\" href=\"http:\/\/ohsheglows.com\/2011\/09\/27\/detox-salad\/\" target=\"_blank\" class=\"broken_link\"><strong>Detox Salad<\/strong><\/a><\/p>\n<p><a title=\"Detox Salad by Angela Liddon\" href=\"http:\/\/ohsheglows.com\/2011\/09\/27\/detox-salad\/\" target=\"_blank\" class=\"broken_link\">by Angela Liddon<\/a><\/p>\n<ul>\n<li><strong>Prep Time:<\/strong> 15 mins<\/li>\n<li><strong>Cook Time:<\/strong> 0 mins<\/li>\n<\/ul>\n<p><strong>Ingredients<\/strong><strong> (10 cups)<\/strong><strong><\/strong><\/p>\n<ul>\n<li>2 heads broccoli (1 bunch), stems removed<\/li>\n<li>1 head cauliflower, stems removed<\/li>\n<li>2.5 cups shredded carrots<\/li>\n<li>1\/2 cup sunflower seeds<\/li>\n<li>1 cup currants<\/li>\n<li>1\/2 cup finely chopped fresh parsley<\/li>\n<li>1\/2 cup raisins<\/li>\n<li>4-6 tbsp fresh lemon juice, to taste<\/li>\n<li>kosher salt, pepper (I used 1\/2 tsp salt and lots of pepper)<\/li>\n<li>kelp granules or Herbamare (optional), to taste<\/li>\n<li>Pure maple syrup, to drizzle on before serving<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<p><strong><\/strong>1. In a food processor (or chop by hand) process the broccoli (no stems) until fine. Add into large bowl.<\/p>\n<p>2. Now process the cauliflower (no stems) until fine and add into bowl. Do the same with the carrots.<\/p>\n<p>3. Stir in the sunflower seeds, currants, raisins, and parsley. Add lemon juice and seasonings to taste.<\/p>\n<p>4.
