{"id":8995,"date":"2019-10-07T08:30:33","date_gmt":"2019-10-07T12:30:33","guid":{"rendered":"http:\/\/blogs.butler.edu\/healthyhorizons\/?p=8995"},"modified":"2019-10-03T09:22:32","modified_gmt":"2019-10-03T13:22:32","slug":"a-healthier-fall-treat","status":"publish","type":"post","link":"http:\/\/blogs.butler.edu\/healthyhorizons\/lighten-up-your-recipe\/a-healthier-fall-treat\/","title":{"rendered":"A Healthier Fall Treat"},"content":{"rendered":"<h1 class=\"fn\">Butternut Squash and Apple Muffins with Pumpkin Seed Streusel<\/h1>\n<div class=\"program\"><a href=\"http:\/\/wpsu.org\/localfoodjourney\/comments\/butternut_squash_and_apple_muffins_with_pumpkin_seed_streusel\" class=\"broken_link\">Recipe courtesy of Local Food Journey<\/a><\/div>\n<div><img loading=\"lazy\" decoding=\"async\" class=\"photo wp-post-image\" title=\"\" src=\"http:\/\/www.pbs.org\/food\/wp-content\/blogs.dir\/2\/files\/2012\/01\/butternut-squash-apple-muffins640x360-288x162.jpg\" alt=\"butternut-squash-apple-muffins640x360\" width=\"288\" height=\"162\" \/><\/div>\n<div class=\"clear\">\n<h6>Muffins:<\/h6>\n<p>1 1\/2 cups of cooked butternut squash (I like to halve mine, scoop out seeds, and slow roast for about an hour at 325 degrees Fahrenheit)<br \/>\n4 eggs<br \/>\n1\/4 cup of dark brown sugar (up to 3\/4 cup for a sweeter muffin)<br \/>\n1\/3 cup applesauce<br \/>\n6 T vegetable oil<br \/>\n1 t salt<br \/>\n1 t baking soda<br \/>\n2 t baking powder<br \/>\n2 t cinnamon<br \/>\n2 cups whole wheat pastry flour<br \/>\n1 medium apple, peeled, seeded, and finely chopped<\/p>\n<h6>Streusel:<\/h6>\n<p>1\/4 cup dark brown sugar (can use more here too if you like)<br \/>\n1 t cinnamon<br \/>\n1\/3 cup chopped and toasted pumpkin seeds<\/p>\n<h6>Directions<\/h6>\n<p>1. Preheat oven to 350 degrees Fahrenheit.<\/p>\n<p>2.\u00a0 In a large bowl, mix wet ingredients by whisking together cooked squash, eggs, dark brown sugar, applesauce, and vegetable oil.<\/p>\n<p>3. In a medium bowl, mix dry ingredients by combining salt, baking soda, baking powder, cinnamon, and whole wheat pastry flour.<\/p>\n<p>4.\u00a0 Add dry ingredients to wet ingredients and whisk until just combined.\u00a0 Stir in chopped apples.\u00a0 Spoon into greased muffin tins about 2\/3 of the way full.
