{"id":9135,"date":"2019-11-18T08:30:42","date_gmt":"2019-11-18T13:30:42","guid":{"rendered":"http:\/\/blogs.butler.edu\/healthyhorizons\/?p=9135"},"modified":"2019-11-12T12:46:06","modified_gmt":"2019-11-12T17:46:06","slug":"green-bean-delivery-november-newsletter","status":"publish","type":"post","link":"http:\/\/blogs.butler.edu\/healthyhorizons\/green-bean-delivery-newsletter\/green-bean-delivery-november-newsletter\/","title":{"rendered":"Green Bean Delivery November Newsletter"},"content":{"rendered":"<p>Power Food for the Brain<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9136\" src=\"http:\/\/blogs.butler.edu\/healthyhorizons\/files\/2019\/11\/Paleo-Pancakes.png\" alt=\"\" width=\"220\" height=\"126\" \/><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1\/2 c. coconut flour<\/li>\n<li>1\/4 t baking soda<\/li>\n<li>1\/2 t salt<\/li>\n<li>1\/2 c milk of choice<\/li>\n<li>4 T coconut oil, melted<\/li>\n<li>6 eggs<\/li>\n<li>4 T honey or maple syrup<\/li>\n<li>1 t vanilla extract<\/li>\n<li>Coconut oil or unsalted butter for cooking<\/li>\n<li>Blueberries, fresh or thawed<\/li>\n<li>Maple syrup<\/li>\n<\/ul>\n<p>Directions: In a mixing bowl, combine dry ingredients: coconut flour, baking soda, and salt. In another mixing bowl, combine the wet ingredients: milk, coconut oil, eggs, honey, and vanilla extract. Whisk dry ingredients into wet ingredients.<br \/>\nMelt a tablespoon of butter in a cast iron skillet over medium heat. Using a \u00bc cup measuring cup, pour batter into skillet. Toss desired amount of blueberries over the top and cook until golden brown on the bottom of the pancake, about 2 minutes. Flip and cook on the other side, another 2 minutes. Repeat until batter is gone. Top with maple syrup and more blueberries (if desired).
