{"id":9507,"date":"2020-03-24T08:30:33","date_gmt":"2020-03-24T12:30:33","guid":{"rendered":"http:\/\/blogs.butler.edu\/healthyhorizons\/?p=9507"},"modified":"2020-03-23T15:08:08","modified_gmt":"2020-03-23T19:08:08","slug":"almond-pumpkin-pancakes","status":"publish","type":"post","link":"http:\/\/blogs.butler.edu\/healthyhorizons\/lighten-up-your-recipe\/almond-pumpkin-pancakes\/","title":{"rendered":"Almond Pumpkin Pancakes"},"content":{"rendered":"<p>Thank you for this contribution from our own Claudia Johnson, Administrative Assistant.\u00a0 Something warm and aromatically rich with spices may soothe and calm your harried day or night.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"\" src=\"https:\/\/farm6.staticflickr.com\/5719\/22935282041_db6f0ed1c0_b.jpg\" alt=\"Pumpkin pancakes | Liliana Fuchs | Flickr\" width=\"212\" height=\"143\" \/><\/p>\n<p>Dry ingredients:<\/p>\n<ul>\n<li>2 cups almond flour<\/li>\n<li>2 tsp cinnamon<\/li>\n<li>2-3 packets Stevia (reg or vanilla)- alternately can use the liquid stevia in the wet ingredients<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<li>1\/4 tsp cloves<\/li>\n<li>1\/4 tsp nutmeg<\/li>\n<\/ul>\n<p>Wet ingredients:<\/p>\n<ul>\n<li>1 can unsweetened pumpkin puree<\/li>\n<li>3 eggs slightly beaten<\/li>\n<li>3 Tbsp almond milk (unsweetened- I like the vanilla flavored)<\/li>\n<\/ul>\n<p>In separate bowls<\/p>\n<ul>\n<li>Mix dry ingredients well<\/li>\n<li>Mix pumpkin and milk, then add eggs<\/li>\n<\/ul>\n<p>Pour\/ mix wet into dry ingredients completely<\/p>\n<p>Mix dry ingredients well.<\/p>\n<p>In second bowl, mix pumpkin and milk, then add eggs<\/p>\n<p>Pour\/ mix wet into dry ingredients completely<\/p>\n<p>On preheated iron or non-stick skillet (medium\/medium-low heat), drop 3 large spoonfuls of batter and spread\/flatten each slightly to 4-5 inch rounds.<\/p>\n<p>Let cook about 5 minutes before flipping. Pancakes may fall apart easily.\u00a0 Just mash together and flip to continue cooking.\u00a0 Remove when lightly browned on both sides, with centers firmed up.
