5ks, sunshine and nut butters make my summer!

Hello everyone!  There is only one condiment in the world that I can really identify as nutritious, satisfying and extremely versatile — peanut  butter.  Whether it is in a bowl or a box, in a smoothie or oatmeal,  I want you to see how easy the PB life is!  Here are a few of my summer staples!

 

Pre-run Breakfast:  Peanut Butter and Chocolate Swirled Oats with 1/2 a Sliced Banana

Ingredients:

1/2 cup dry quick-cooking oats

1 Tablespoon of preferred nut butter

2 Teaspoons of chocolate syrup, for drizzling (can be sugar-free)

1/2 sliced banana for topping

Directions: Pour oats into bowl and add water according to package directions and desired thickness.  Microwave on high for two minutes and let set for an additional minute after cooking.  Take out oats, and drop one tablespoon of nut butter and stir.  Slice half a banana on top and drizzle the chocolate.  Enjoy!

Snack or Afternoon Treat: Jif Cereal

All of you Jif-lovers, this is a dream come true!  I found this cereal the other day when grocery shopping.  It’s a perfect whole grain cereal, with less sugar and still tastes like a dessert!  You can also throw in a cup of this with some dark chocolate chips, pistachios or raisins for some satisfying crunch!

 

Snack or Lunch:  Peanut Butter Banana Pinwheels

 Ingredients:

1 light or whole-grain tortilla

1 sliced banana

1-2 Tablespooons of nut butter of choice (I use Jif)

2 Teaspoons of other toppings — raisins, chocolate chips, etc.

* also feel free to add 1/3 cup of fresh blueberries or fresh strawberries!

 Directions:  roll out one tortilla.  Spread nut butter and slice one whole banana.  Add preferred toppings and roll up.  Slice full wrap into one inch sections.

Post-workout Fuel:  Peanut Butter Protein Smoothie inspired by Popsugar Fitness

Ingredients:

1-2 Tablespoons of preferred nut butter

1 tsp of honey

1 cup of skim milk, almond milk or soymilk (for a more chocolatey taste I like chocolate-flavored silk!)

6-7 ice cubes

Directions:  Simple!  Blend all ingredients in a blender for two minutes or until smooth.  Sip and smile!

*if you all are wondering what type of nut butter to use, I usually use Jif low sodium/reduced sugar or Jif all natural.  For a different consistency I like PB2 as well!
