Garden Fresh Ingredients – Vegetarian Stuffed Zucchini
These vegetarian stuffed zucchini are a delicious and hearty meatless Monday meal option, or the perfect side dish to just about any kind of grilled or roasted meat. It’s a delicious way to get even the pickiest eater to eat their vegetables and this is definitely a recipe you’ll want to make again and again! Enjoy!
- 2 small to medium zucchini squash
- 2 tablespoons extra virgin olive oil
- ½ cup diced Vidalia or other sweet onion
- 2 medium garlic cloves minced
- 1 cup sweet red pepper ½ inch diced
- 1 cup diced Crimini mushrooms ½ inch diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 tablespoons fresh chopped parsley
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 cup panko bread crumbs
- ¼ cup grated Parmesan cheese
- ⅛ cup grated Romano cheese
- Additional grated parmesan to sprinkle over cooked squash
Instructions
- Preheat oven to 375 degrees
- Trim stem end from squash. Cut about ⅓ off the top of each squash horizontally. Then cut a small horizontal sliver from the bottom so that the squash will sit flat and not roll. Dice the tops to ½ inch dice and set aside.
- Using a small paring knife, cut around inside of squash then using a melon-baller, scoop out inside until the squash resembles a canoe. Try not to cut through to the bottom.
- In a large skillet or frying pan heat the oil over medium heat. Add onion and cook two minutes. Add garlic, red pepper, mushrooms and cut up zucchini tops. Mix to combine and sauté one minute.
- Remove from heat and mix in oregano, basil, parsley, salt, pepper, crumbs and both cheeses. Mix to combine.
- Divide the filling between each zucchini boat and press into squash filling and pressing as you fill to hold shape.
- Bake for 35 – 40 minutes uncovered. Try not to over cook, otherwise the zucchini will start to sag and the filling will not stay in.
- As soon as they come out of the oven, sprinkle the tops with additional Parmesan cheese and serve.

Red Cross Issues Safety Tips for Labor Day Weekend
Many people view Labor Day as the end of summer and their last chance to travel, hit the beach and fire up the grill. The American Red Cross offers safety tips to help everyone have a safe and enjoyable holiday.
“While many people will spend the Labor Day weekend traveling and spending time with family and friends, no one should take a vacation from safety,” says Phil Hansen, Regional Chapter Executive of the American Red Cross Northern Minnesota Region. “It’s still important that people work to remain vigilant on the road, at the beach and at cookouts.”
People should follow these safety tips:

Carry an emergency supply kit in your trunk.
Let someone know your destination, your route, and when you expect to arrive.
Buckle up and observe speed limits.
Don’t drink and drive.
- Tips for Safe Swimming
Check weather and water conditions beforehand and throughout the day.
Always swim with a buddy in a designated swimming area supervised by a lifeguard.
Provide constant supervision to children in or near the water and always stay within arm’s reach of young children and inexperienced swimmers while they are in the water.
Young children and inexperienced swimmers should wear U.S. Coast Guard-approved life jackets.

Keep the grill away from the house, tree branches, or anything that could catch fire.
Always follow the manufacturer’s instructions.

September is Leukemia and Lymphoma Awareness Month

Due in large part to the Lymphoma Research Foundation’s (LRF) Advocacy Program, September was designated as National Blood Cancer Awareness Month in 2010 by the United States Congress. Since then, LRF has been a leader in raising public awareness about lymphoma and Blood Cancer Awareness Month, not only during the month of September but throughout the year.
Light it Red for Lymphoma
To commemorate National Blood Cancer Awareness Month and World Lymphoma Awareness Day (September 15), the Lymphoma Research Foundation is encouraging individuals, buildings, landmarks and business to shed a light on lymphoma not only to raise awareness about this type of blood cancer, but also to give hope to those who have been affected by this disease.
