31 Days of Pumpkin… Getting PUMPed for Monday

We all know that feeling coming back after a break (although it was only a few days off)… you’re tired, and, if you’re like me, the first thought is, “When is my next break?”  Although the pumpkins pictured above my fabulous roommate painted are cheerful, I wanted to find a good pumpkin recipe that would get my spirits up — something that I could eat while studying or take with me to class but not be another muffin or cookie or piece of bread.  The oats on top of my fridge came to the rescue in this case, and I am very excited to share these Pumpkin Chocolate Chip Granola Bars from a blog called Two Peas and their Pod — usually the stuff on here is organic or minimally processed, so you can feel good about putting some real food into your body.  Here’s how they work (click the link above for the full ingredient list — you would be surprised that a majority of this list you probably already have in your house!):

The recipe calls for old fashioned oats, but I think quick-cooking works just as well.

Combine the oats, salt and spices into a large bowl, using a wire whisk.

Pour the wet ingredients with the dry and stir well until everything is combined.

Spread batter into a greased 8x8 pan and bake at 350 degrees F for about 30 minutes.

These are a really great snack if you need a snack for class this week … I consider myself a granola bar person (I like anything Kashi) but I like this baked version better.  Plus, they smell soooo good while you are baking them 🙂  You always win when you use pumpkin :D.
