I realize I have been MIA for the past few days, but I promise I have been keeping up with my pumpkin challenge. Fall break really gave me a great chance to find new recipes and use all of my grandma’s fancy kitchen tools.. score! As I am smelling my granola bars bake, I will share with you this weekend’s happenings, beginning with Friday. Due to time restraints, I baked multiple things on Friday night to make up for what I missed earlier last week. Those days I relied on my Trader Joe’s Pumpkin butter and my pumpkin spice coffee to make sure I got some form of pumpkin in for the day.
So let’s begin with Friday night… The very first thing I made (not really pumpkin flavored but I am counting the pumpkin Candy Corn :P) was an autumn mix… very simple and quick — absolutely fabulous for munching while catching up on some homework (or while laying around watching a ton of movies like I did).
I adapted this blogger’s version slightly, but it’s the same overall idea
Ingredients
2 cups pretzels
1 cup of candy corn mix
1 small boxed package of Reese Pieces
1 cup of Craisins
1/2 cup Sunflower Seeds
3/4 cup almonds
Directions: Combine all ingredients into a large bowl. Adjust as necessary according to taste. Also feel free to use other mix-ins like honey roasted peanuts, chocolate chips, butterscotch chips or m&ms. NOM.
