28 days of oats … Perfectly Protein-Packed Pancakes

Even though its cold, it sure is pretty!

This past week, it seems as if everything has started to pick up — homework, work, social gatherings…By the time today hit, I decided it was time for a break  before I hit the ground running again on Monday.  Therefore I decided  to start my day with one of my favorite foods in the world — pancakes!  However, in honor of this February challenge, I decided to add a little oat twist.  They require minimal ingredients and take about 10 minutes to prep: win-win!

This recipe was adapted from one I found on Pinterest, and just lIke with any other pancake recipe, feel free to add in your own mix-ins.

Perfectly Protein-packed Oatmeal Pancakes

Ingredients:

1/2 cup whole grain quick-cooking oats

2 egg whites

1/2 mashed banana

1/4 tsp cinnamon

pinch of nutmeg

1 TBSP chocolate chips, walnuts, berries or your favorite add-in

Gather all ingredients

Pour oats into bowl

Add  egg whites.  Stir.

Mash the banana with a fork

Add banana into oat mixture.  Stir.

Add your mix-ins

have a pan preheated at medium heat and sprayed with no-stick spray.

Pour all of batter into prepared pan

Cook until golden brown on each side, about 3-4 min
