What’s Cookin’?

This post might target more of a female audience, but I think it is really appropriate for anyone who enjoys spending time in the kitchen; Whether it’s eating, baking, cooking or reconnecting with family and friends, there is surely something for everyone to do to spread a little cheer.  Even if you are by yourself, baking/cooking can sometimes be a great de-stressor; it’s often fun to experiment.

For example, over Thanksgiving Break I took it upon myself to do the most stereotypical “I’m bored-girly” move; to bake a recipe off of the Pinterest site.  The best part?  This particular recipe only required two ingredients; one 15-ounce can of pumpkin and a box of spice cake mix (but of course I added chocolate chips).  Also, feel free to add your own spices; I added cinnamon, nutmeg and pumpkin spice for a little bit of flavor.  Listed below are a few pictures describing the process.  I also got in the spirit using Rudolph paper cups 🙂

First, I combined the Spice Cake Mix, entire can of pumpkin and spices into a bowl

Mixing

Be careful; my mix was particularly dry so when stirring, you might have to add a little bit of milk to make the batter a little thinner (I used skim, but any kind will do).

Stir until you no longer see any bits of batter; this is the point where you can add in chocolate chips, butterscotch chips or white chocolate chips if you want.

of course I go with the chocolate!

Any brand of chocolate chips will do 🙂

Scooping the batter in

I find it easier when making muffins or cupcakes to use a large ice-cream scoop (comes out way easier!).

In the oven!

Bake the muffins at 350 degrees Farenheit until small folds appear on top, (about 15-18 minutes for a fully pre-heated oven; you will notice because these “folds” will harden).  Test them with a toothpick and if nothing sticks, set them on a cooling rack.  Yum!

They are done!
