I apologize, but I’m going a little bit out of order because I have not uploaded the pics from Sunday yet — so I’m going to go ahead and post yesterday’s recipe. Again, I was still a little burned out on the sweet stuff, and I wanted something I would fuel me after my run, satisfying me yet not weighing me down. I had some leftover pumpkin in my fridge that I needed to get rid of. I was craving something cold, so I opted for a smoothie/milkshake. This recipe is extremely easy and you can either do it with a Magic Bullet or a regular blender. I’m considering making another one of these tonight! Get ready to sip and savor 🙂
Fresh and Fit Pumpkin Smoothie
Ingredients
1 cup of light Silk Original Almond Milk
1/4 cup canned pumpkin
pinch of pumpkin pie spice
pinch of cinnamon
pinch of nutmeg
1 TBSP Jell-O sugar free vanilla pudding mix
SMALL scoop of pumpkin (or vanilla) light ice cream (I used Edy’s)
4 ice cubes
To Begin: put all ingredients in a blender, beginning with the ice cubes on the bottom. Pulse for a little over a minute, or until blended. Pour into a tall glass and voila!
I love how this recipe can make a good post-workout treat, dessert or snack. Yeah, I’m probably going to be making this again tonight :).
