Hey guys, once again the weekend got the best of me. Nevertheless, I managed to stay on top of all things pumpkin-related. Sorry I’m finally just getting to these recipes! Saturday’s recipe was a little make-shift recipe, but I’m super excited to make it again (and kind of proud of myself for the improv ingredients :P). So, let’s do some catch-up. Over the weekend, I had to study for a kinesiology test and (as always) I got hungry; but I was getting a little burned out on all of the sweet treats, so I decided to look for something a little different. I knew I probably shouldn’t make the Pumpkin Spice Puppy Chow again, but I had just bought some cinnamon cereal and I had leftover nuts and Craisins from another recipe I made earlier in the week. So, I naturally got excited when I ran into this recipe by Live Better America. Yes, I had to make some changes, but it still tasted yummy. For the original recipe, click here. But here is my adapted version. **Also, because I knew it would just be me I halved the recipe.
Pumpkin Snack Mix
Ingredients:
1/8 cup of brown sugar
1/2 TBSP pumpkin pie spice
1 TBSP light butter (can also use spread)
1 tsp. vanilla
3/4 cup of cashews
1/3 cup of chocolate chips
1/3 cup of Craisins or raisins
3 Cups Cascadian Farms whole grain cinnamon cereal (or Cinnamon Chex for gluten-free option)
To Begin: Grab a small bowl to mix dry ingredients, a large microwave-safe dish and another small bowl to melt butter in.
